Food: Easy Irish Soda Bread

A little late, I know… but what better way to finish off St. Patrick’s Day leftovers than with a quick, easy and tasty loaf of Irish Soda Bread? Oh, and when I say quick and easy- I mean it! This loaf went from zero to in my belly in just over 30 minutes.

  • 1 cup milk
  • 1 teaspoon vinegar
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup raisins
  • 1 egg, whisked with 2 tablespoons water (optional)

Preheat oven to 400. Mix vinegar into milk in small bowl or cup, let sit for 10 minutes or until curdled. In another bowl, mix flour sugar, salt and baking soda.

Stir milk mixture into flour and mix until smooth. Scrape dough down and turn out onto floured surface. Work into a ball, and place onto a cookie sheet lined with parchment paper. Bake for 20-25 minutes or until lightly browned.

Optional- take out at 15 minutes and brush on egg wash. Return to complete baking. This recipe can be easily veganized by substituting plain soy milk and omitting the egg wash.
