Home: Dinner Plans for 5/1-5/6

Just in case you weren’t paying attention, a sneaky little lass called May showed up. And, I now know how newer mothers find themselves a year later still trying to work off the baby weight. I mean, I now have a 7 month old and things still aren’t right. I gained 60 pounds and had an 8 pound baby. Yup, that left me with about 52 pounds that had to go somewhere.

Thinking about that, perhaps it wasn’t the best decision last week to make  Dorito Casserole for the potluck at work. It was tasty and I have no regrets.

This week, we have several things going on and I’m planning on only cooking at home twice this week. I’m planning:

  • Steak Taco Fajitas with standard fixings
  • Asian Lettuce Wraps from one of my favorite Mommy/Foodie bloggers, Annie.
  • Something sweet: Chiplote Cinnamon Brownies
